Outputting Can information via Bluetooth

Having a bluetooth module hooked to the can line sounds like a great way to output a lot of saab specific data to a connected device.

Do you think an "OpenSID app" is doable with the current BlueSaab hardware?

This should be doable. But in that case for the time being of the comms, the bluetooth module would need to assume some sort of "serial passthrough" profile, which would (in my opinion) disable the audio passthrough.
